Job Overview:

Grazing by Mark Greenaway is situated on the ground floor of the hotel with access from Peacock Alley and Rutland Street.

What you’ll do:

  • Rota engineering to ensure that the operations are run so that all standards are considered as well as well as to the allocated payroll budget
  • Recommend Team Members for additional development, including cross exposure, company training courses, internal and external promotion. Ensuring a succession plan is in place for the Food & Beverage department.
  • To ensure that all information regarding to the Food & Beverage department is shared with all stakeholders in a timely manner.
  • Manage the functions of administration and planning of the Restaurant to meet the daily needs of the operation.
  • Financial awareness so that there is enough knowledge to make business decisions
  • To ensure all Food & Beverage areas and colleagues maintain the highest standard of presentation and execution of duties.
  • The ability to interview and recruit new team members and talent through the correct channels that are set by the company
  • Evaluate the performance of Restaurant Team Members ensuring effective development at all levels, including use of the Appraisal system, and coaching development programmers. To take responsibility for recruitment at all levels within Food and Beverage.
  • Describe, assign and delegate responsibility and authority for the operation of the various outlets under their supervision. Assists HOD in achieving service standards, profit and productivity objectives.
  • Instill in all reports, a high concern for effective control of Food, Beverage and labour costs
  • Conducts regular communication meetings with Managers and oversees the entire communication meeting program with their departments.
  • To maintain a constant awareness of department security especially related to cash, stock and equipment and to ensure all department procedures are fully adhered to.
  • Work to continually improve brand standards and SALT scores within the Food & Beverage department while continuously challenging the team.
  • Maintain effective communication on the activities of the department with the other departments within the hotel to ensure the best possible service to customers.
  • In liaison with the Food and Beverage Manager prepares forecasts, budgets and future planning of all of the Food and Beverage outlets. Works within agreed margins, wage costs and productivity ratios. Recommends to management innovations in policy, procedure and equipment.
  • Be a key player in green initiatives, recycling efforts and to be proactivity green in every action though support of the Heart of House Manager.
